3、eeting the guests politely, serving food and beverages properly, and clearing the table skillfully. Here are some useful tips concerning banquet service.Make a good preparation for the table setting. Make sure each plate, fork, knife, spoon and glass is clean and placed properly.Get to know about ea

4、ch course to be served in advance.Greet the guests politely with a friendly smile. Pronounce (发音) and describe the dish when serving it to the guest.Remember to begin the service always by starting with the female guest of honour (女主宾), the woman on the hosts right, or the guest of honour (男主宾), the

6、o always serve from the left side of the guest with your left hand.Serve the wine from the right side of the guest, where the wine glasses are in place. Pour wine first into the glass of the female guest of honor, unless she doesnt want to.Then fill the others glasses by moving around the table coun

If only the guest of honor is present, then serve him first instead.Fill the red wine glass halfway, and the white wine glass three-fourths full.Serve the wine at a cool room temperature. And chill the white wine in the refrigerator at least two hours before the meal, or chill the whit

8、e wine in a wine cooler (冷酒器) for twenty-five minutes in a bath of ice cubes and ice water.If there are more than eight or ten guests, two servers are needed. One begins serving the female guest of honour; the other begins serving the guest of honour at the other end of the table. Each server ends u

9、p serving the host or hostess last.Once a course is finished, remove each used plate from the right side of the guest with your right hand. If there is a fork and knife or spoon on each plate, clamp down (压住) on them with your right thumb in case they fall off the plate.Bring in the clean plates for

10、 the next course, and put down each in front of the guest from the left side.Make sure you lift the heavy tray with grace and serve food on the feet steadily and quickly.When its time for dessert, clear the table by removing the entre or salad course plates as well as the knives and forks.Bring in t

11、he dessert plates. Then ask each guest if he or she would care for coffee or tea.If yes, put down a three- quarter-filled coffee cup and saucer with the coffee spoon on the right side of the saucer from the right side of each guest. Then pass to each guest the tray containing the cream, sugar, and a

12、rtificial sweetener (人工甜味剂).During the after-dinner coffee hour, when everyone has been sipping their coffee, offer a tray bearing a bottle of cognac (白兰地) and one or two sweet liqueurs, plus several snifters and small liqueur glasses.After a while, carry a tray of tall glasses of ice water first to
