1、第三届全国旅游院校饭店服务技能大赛（调酒）指导方案一、调酒师（鸡尾酒调制）比赛规则和评分标准（一）、比赛内容1、规定鸡尾酒的调制2、调酒方式为英式调酒。（二）、比赛要求1、选手必须佩带参赛证提前进 入比赛场地，裁判 员统一口令 “开始准备”进行准备，准 备时间 2 分钟。准备就绪后，举手示意。2、选手在裁判员宣布“ 比赛开始”后开始操作。3、所有操作结束后，选手应回到操作台前，举手示意“ 比赛 完毕”。4、物品落地每件扣 6 分，物品碰倒每件扣 4 分；倒酒时每洒一次扣 3 分。5、规定鸡尾酒的调制要求选手按 该鸡尾酒的标准配方，在规定的时间内进行调制。规定鸡尾酒的调制内容：名称：五色彩虹酒材
2、料：红石榴糖浆、绿色薄荷酒、黑色樱桃白兰地、无色君度利口酒、棕色白兰地。制法：必须使用吧匙（Bar Spoon）调制，在利口酒杯内依次将上述原料 缓慢注入即可。要求：酒杯总容量约为 30 毫升。酒液量占酒杯八至九成满 ，间隔距离均等。时间规定：5 分钟（包括操作时间、相关酒水及器具等的复位时间。提前完成不加分，每超过 30 秒扣 5 分，不足 30 秒 为 30 秒计算，超 时 1 分钟不予 计分）。（三）、比赛物品准备1、操作台、规定鸡尾酒调制用的酒水由组委会提供。2、规定鸡尾酒调制用的用具，自创鸡尾酒调制用的酒水、用具、各类载杯及装饰物等其他物品均由选手自行准备（注：装饰物只能为原材料或半
