1、DIYDelicacyBeef On Toothpicks(牙签牛肉)Ingredients:v350g Beef (brisket胸肉 or flank侧腹)vSome frying oilv20g Dry chillies (干辣椒)v1/2 tbsp Minced garlic (蒜末)v1 tsp Shredded ginger (姜丝)v2-3 stalk Scallions (葱)v1 tsp Szechuan peppercorns, ground(花椒粉)v1 tbsp Roasted sesame seeds (熟芝麻)Marinade(腌料):v1 tsp Szechuan
2、 peppercornsv200ml Waterv1-2 tsp Cumin powder (孜然粉)v1/2 tsp Chicken bouillon (鸡精)v1/2 tbsp Jiafan rice winev1 tsp Caster sugar (砂糖)v2 tsp Cornstarch (玉米淀粉)v1 tsp Dark soya sauce (老抽)v3/4 tbsp Light soya sauce(生抽)CleanCutPoundClean the beef brisket (or flank), cut into 4cm pieces and pound (拍打) them
3、into rectangular strips(长条), about 3 mm thick.Chop the scallion and cut the dry chillies into smaller sections. Place water and Szechuan peppercorns into a pot. Cook for 10 minutes over medium fire. Remove and let cool.Set the beef strips in a large bowl and add in Szechuan peppercorn water and the
4、rest of the marinade ingredients. Mix them until well combined. Place them in the refrigerator and let marinate overnight.Skewer(串住) the beef strips with toothpicks. Heat up a frying pan with oil until very hot and fry the beef until they are just cooked. Drain(晾干).Stir-fry chillies, gingers, scalli
5、ons and garlic until fragrant. Return the beef to the pan, then sprinkle ground Szechuan peppercorn and roasted sesame seeds over.
