1、川菜英译汇编川菜是四川文化中最具特色和招牌的名号之一。川菜的麻辣鲜香口味令众多食客们流连忘返, 其美名早以远播海内外。许多外国友人来到四川都禁不住要美美体验一把这里的麻辣火锅, 麻婆豆腐等。成都的各种美味小吃更是展现出了成都人民爱生活, 爱美食的情趣。要把川菜进一步广泛深入地推向世界, 促进国际间的美食文化交流离不开翻译工作者们对于川菜菜名的翻译。川菜配料丰富, 调味多变, 菜式多样, 川菜菜名更是别具一格。如何既体现出川菜的用料, 又能吸引国外友人便成了川菜翻译的难题。目前对于川菜的翻译研究不在少数, 也提出了相应的翻译原则和翻译方法, 但多流于民间, 略显零散, 缺乏权威的参考价值。本次收

2、集覆盖较全面, 分类较系统, 除了将川菜按照饮食顺序分成凉菜, 热菜, 汤羹和小吃外, 更将种类最繁杂的热菜按照主料分为了猪肉, 牛肉, 禽蛋, 海鲜等。希望通过这种汇集给喜爱川菜翻译的研究者们提供全面系统的参考;给四川及成都各餐饮服务行业出具较规范的菜名翻译, 以促进其餐饮业的发展;同时也希望借助此次收集将川菜文化进一步推广, 吸引更多的国外游客来四川旅游, 品尝川菜的美味。本课题按照川菜的种类, 汇集了从凉菜, 到热菜, 汤菜再到小吃的川菜菜名翻译, 并对部分菜名进行了翻译修正, 以求达到更准确合适的翻译, 如有不甚妥帖之处, 欢迎指正。一、凉菜类 中文菜名英文译名白菜心拌蜇头Marina
