In order to perpetuate the above-mentioned mission in all Leon restaurants, the formation of an operation manual is important in unifying the operation of the restaurants. This manual encompasses not onl
8、y the operating concept and philosophy of the Leon restaurant, but also a set of policies and standards for the Director of Food and Beverage as well as the other staff concerned to follow through. This manual can also serve as a cost-effective training aid for the new management staff, especially d
9、uring the pre-opening stage of the restaurant, because they can capture an overall picture of the operation and the required standards within a short period of time. Since the products and service standards are not absolute, the management reserves the right to make appropriate revisions of the manu
10、al when deemed necessary, so as to keep up with market trends and conditions.
