2、itionisheattreatedforsterilizingitandmaybeasepticallypackagedforalongshelflifeatroomtemperature.ClaimsWeclaim:1. Aready-to-serveheattreatedbeveragecomprisingasterilizedmixtureofabeveragevehiclecontainingmildprotein,abeveragebaseselectedfromagroupconsistingofabeveragebasecontainingcoffeeandabeverageb

3、asecontainingtea,kappacarrageenanintheamountofupto0.010%byweight,andbufferingandchelatingagentsfor,respectively,bufferingacidsforprotectingmildproteinsfromheatcoagulationandbindingcationswhichformkappacarrageenan-mineralcomplexes,inanamountupto0.25%byweight,comprisedofaphosphateandatleast0.005%bywei

4、ghtofatleastonealginateselectedfromagroupofalginatesconsistingofsodiumalginateandpropylenegylcolalginate,eachweightbeingbaseduponatotalweightofthebeveragecomposition.2. 15、beenpossibletoproduceanacceptableready-to-servecafeaulait(coffeewithmilk)productinvolvinghightemperatureprocessingfollowedbyasepticpackagingowingtothedevelopmentofpoorphysicalstabilitydefectsincludingcreaming,sedimentationandgelatin.Inaddition,thecoffeeflavourintensityandqualitytendtodeterioratesign

16、ificantlyuponstorage.ThesestabilityproblemsoccurduetothedifferentchemicalcompositionsofcoffeeandmilkwhichrenderthemdetrimentaltoeachotherinmaintainingconsistentphysicalandflavourshelfstabilityIncafeaulaitthesedetrimentalrelationshipsarebufferingagents,hydrocolloidfurthercomplicatedbyadditivessuchasstabilisersand/oremulsifiers.SUMMARYOFTHEINVENTIONWehavenowdevisedaready-to-serveheattreatedmilkproteincontainingbeverageinwhichthe
