It has a rich h
2、istory dating back to around 6000 BC, and was very common in ancient Greece and Rome. Wine has also played an important role in religion throughout history the drink is used in Christian and Jewish ceremonies.,Classification of Wine,From color: White wine Ros wine Red wine From distillation: Still w

6、ently to open wine for guest,1. Hold the wine bottle by the neck. 2. Cut capsule just below the bottle lip, by placing your thumb on the opposite side of bottle from the blade and cut firmly twisting the bottle. 3. Place the capsule in your apron or pocket. Return blade into waiters friend. 4. Locat
7、e the centre of the cork with the point of the corkscrew and press point firmly into the cork. 5. Screw the corkscrew clockwise until one turn of the corkscrew remains. 6. Place the lever onto the lip of the bottle and hold firmly in place. 7. Ease the cork out to avoid a pop, wipe the top of the bo
8、ttle with your waiters cloth. 8. Remove cork from your waiters friend.,Serving Table Wine,Select the correct glass & pour a sample taste approx 30ml in bottom of glass ( from the right side) for the host seek his approval Pour for all guests at the table ( moving in an anti-clockwise direction) serv
9、ing 1/3 to 1/2 glass, ensuring there is an even quantity per guest ( including host), use the twist & lift method. Use your waiters cloth to wipe the top of the bottle to avoid drips when pouring. Store remainder of wine appropriately either ice bucket for white and rose or centre of table for bed.
10、Note: if the wine is a quality wine, or the cork has crumbled offer to decant the wine after the host has tasted it.,Serving Wine by Glass,The wine may be opened at the bar previously. It is not customary to have guest taste the wine, this should be done by observation (aroma / bouquet, color and da
11、te opened) at the bar. If you are suggesting wines for guests you may wish to give a sample taste to involve them in the decision, and therefore their enjoyment of the dining experience. Announce the wine to the guest and hold the bottle so they can read the label when pouring, pour to the right of
12、the guest, twist and lift. You may need to carry several bottles to the table when guests are drinking wine by the glass, it is OK to place them neatly on the table if you are having difficulty balancing them. Remember guests drink at different rates, so keep an active eye on the table when they are
13、 drinking by the glass ALL wines by the glass should be dated and pumped at the end of every service, a wine stored correctly can hold for 2-3 days.,Wine & Food Matching,Ensure that the fullness and size of the taste of the wine matches the taste of a dish, not portion size. Ensure the aroma and weight of the dish or wine do not overpower each other, rather compliment e.g. do not serve a powerful wine with a delicate food and vice versa. Read the descriptors for the wine and see if those flavors match or compliment the flavors of the dish.,
