1、材料:猪蹄 4只老抽 1大勺花雕酒 1大勺盐 1勺大葱 1/2棵姜 一块清水 适量做法:1、净猪蹄对半砍开,再将砍开的一半继续砍开,成为4块;2、放入清水中浸泡30分钟,中途换一次水;3、猪蹄、葱、姜、花雕酒一起放入锅内,加入足够的水,要没过猪蹄;4、大火煮,煮开锅转中火保持沸腾,将煮出来的灰色浮沫撇掉;5、撇净浮沫后加老抽烧至沸腾,转小火慢慢炖;6、大约2小时时,将炖烂的葱姜取出扔掉,加入盐;7、大约4-5小时,猪蹄筋已经软烂且脱骨就可以关掉火,此时汤仍然很多但很粘手,千万不要收汤。8、熬好的猪蹄稍微晾凉,留下带着脚趾部分的猪蹄,剩下的猪蹄取出;9、去掉猪蹄的骨头,将猪蹄略微撕开,铺在饭盒底
