10、rldsfinestrestaurants.Atleastintheworldofgourmetfood,chemistryhasmanagedtoreplaceitsoftentarnishedimagewithagrowingrespectastheapplicationofbasicchemistryinthekitchenhasprovidedthestartingpointforawholenewcuisine.Theapplicationofchemistryandothersciencestorestaurantanddomesticcookingisthusmakingapos
11、itiveimpactinaverypublicarenawhichinevitablygivescredencetothesubjectasawhole.Asyet,however,thisactivityhasbeenlargelyintheformofsmallcollaborationsbetweenscientistsandchefs.Todate,little“newscience”hasemerged,butmanynovelapplica-tionsofexistingsciencehavebeenmade,assistingchefstoproducenewdishesand
